St. Luscious Buns
Okay, Okay. They are more commonly known as St. Lucia Buns. In my opinion, these buns are good enough to be called St. Luscious Buns.
Recipe: Based on the King Arthur Flour recipe.
Modifications: I omitted the saffron and vanilla flavoring. Instead I added 1 teaspoon of almond flavoring to replace the vanilla as well as one tablespoon of orange zest. The almond flavor in the batch I made is very subtle but the orange zest came through nicely. Next time I will add 1.5 teaspoons of almond flavoring (maybe more) and two tablespoons of orange zest.
Near disaster: After the first hour of rest my dough did not rise at all. I suspect my milk/butter mixture was not hot enough to activate the yeast. Instead of throwing the dough away, the internet recommended activating another batch of yeast and working it into the dough. The trick worked like a charm, but I am curious to find out how the rolls would have tasted without the last ditch rescue effort.
Would I make them again? Yes!
